SP 12 question of the week

What is your favorite supper for a hot summer evening? (For added
"flavor", post a photo or recipe link)

I have four favorites for a hot summer evening:

1. Calaprese: Mozzarella and Tomatoes with Aceito Balsamico, Olive Oil, Fleur de Sel and black pepper, basil.

2. Noodle Salad made by my husband: Penne rigate, red peppers, tomatoes, bacon and a yoghurt-mayonnaise dressing.

3. Cous-Cous Parsley Salad

1 cup uncooked couscous
1 cup hot water
olive oil
1/2 cup finely chopped fresh parsley
1/4 to 1/2 cup finely chopped fresh mint leaves
salt
1 red pepper, diced (optional)

freshly ground pepper

2 tomatos, seeded and diced


4. Lemon spaghetti:

Cook your spaghetti as usual al dente.

Sauce: Heat about 125 ml of olive oil in a pan, then reduce heat, add the juice of 1 - 2 lemons, some fleur de sel, black pepper and 200 ml of cream.

Mix your spaghetti and the sauce in a bowl and add lemon zest to it. If desired you can sprinkle some finely cut parsley on top of it. VoilĂ !

I only suggest you the correct spelling for an italian recipe "Mozzarella alla Caprese"
